9 packs of dried beef were observed displayed on top of the meat service case. This firm dried the beef in store to render it shelf stable. This requires a variance. A hold order for these 9 packs of dried beef has been issued. A closure for the firm's dehydrator has been issued until the firm obtains a variance from the department of agriculture. |

A large pool of myoglobin from raw met was observed on the floor of the walk in cooler. This pool had not leaked to the point of contaminating other product but was very close to the tomatoes on the storage walk in cooler floor. |
