Observed diced onions in deli cooler dated 04/03, when asking pic when they were prepared, she stated 03/25, which is 8 days not the 7 required. Observed sliced ham in walk in cooler dated 03/22, put PIC did not know if that was a open date or discard date. Date marking practices are not consistent. |
PIC discarded the ham at time of inspection and changed the discard date on the onions to reflect the correct date at time of inspection. |
