7 packs of cut papaya were observed stored on an unrefrigerated display table at ambient room temperature. The papayas were probed with a state issued and calibrated thermometer at 62 degrees. The PIC voluntarily discarded the product. 2. 61 packages of passionfruit fig jelly and 20 packages of Kumquat lemon flavored jelly that state "Keep Refrigerated" on the table were observed for sale on an unrefrigerated retail shelf at ambient room temperature. The product was scanned with an infrared thermometer at 68 degrees. The PIC voluntarily discarded the items before an internal temperature could be taken. |

The facility was observed to be operating a live molluscan shellfish life support system. The PIC was unable to produce a HACCP plan or variance letter from the TN Dept. of Agriculture. The PIC will be sent guidance documentation to develop a HACCP plan and apply for a variance. |

Tongs used for self service beans sprouts, self service bamboo shoots, and self service seaweed were observed uncovers and not protected. The handles of the tongs were touching the bean sprouts and the bamboo shoots. Discussed with PIC getting utensil cup holders to place next to the self service bins to encourage customers to keep the tongs stored properly. Additionally, employees should regularly check to ensure these tongs are being stored properly between uses. |

The PIC states that this is to be repaired as part of the renovations the firm is undergoing. Holes in several walls in the meat department and at in the back of the firm were observed. The PIC states these are to be repaired as part of the renovation process. |
