Two residential crockpots with nacho chili sauce and nacho cheese sauce were scanned with an infrared thermometer at 71 degrees. The sauces were probed with a state issued calibrated thermometer with chili at 85 degrees and the cheese at 66 degrees. These crockpots were both set to the warm setting which only maintains food temperature and does not increase food temperature. The PIC turned up both crockpots to the high setting. Firm had only been open for 1 hour at time of inspection. These items were probed with the state issued calibrated thermometer again at 135 degrees at the end of the inspection. |

1. The service style cooler was scanned with an infrared thermometer at 66 degrees. Items from this cooler were probed with a state issued calibrated thermometer. Bologna 70 degrees. Hot Dogs 70 degrees. The PIC voluntarily discarded all TCS foods in this cooler. 2. A jar of pickles, a jar of jalapenos, a bottle of mustard, and a jar of spaghetti sauce labeled "Refrigerate After Opening" were observed stored on a prep table at ambient room temperature. The PIC voluntarily discarded these items. |
