Hot dogs located in the deli department display hot holding unit were observed at a temperature below 135 degrees Fahrenheit (probed with the state calibrated thermometer at an internal temperature of 105F and another hot dog probed by the employee present at an internal temperature of 120F-Hot holding warmer was reading 170F Fahrenheit and the state issued surface thermometer was reading 172F-discussed with PIC and employee present that temperatures in hot holding warmers should maintain a temperature of 135F even in an open warmer cabinet/case). |
