Observed the following food products not held at 41F or less when using inspector's probe thermometer. Retail grab-in-go cold holding unit - 4 tuna salad sandwiches measured between 47F and 52F. |
The sandwiches were being made in the morning at the beginning of the inspection. Discussed with PIC at that time cooling ambient products to 41F or lower prior to display in retail. The products were pre-chilled for a short time but were not checked with a probe thermometer prior to display. PIC removed all 4 tuna sandwiches from the retail cooler and placed them back in the walk-in cooler until 41F or lower. |
