Observed the retail cooler not maintaining TCS packaged food products at 41F or less when measured with inspector's probe thermometer. 20 half pound Country Hams had internal temperatures of 47F to 53F. The internal temperature of ten cartons of raw shell eggs measured 48F to 50F.
