PIC Danny Patel was able to properly demonstrate cooking temperatures but was unaware of how to set up sanitizer and proper strength of sanitizer. Danny Patel was unaware of hot holding requirements and how to calibrate a thermometer. |
During inspection Inspector provided temperature requirements handouts and calibration was demonstrated along with sink set up and testing of sanitizer concentration. Before leaving Danny Patel was able to set up sink and calibrate a thermometer. |
